Stevia sugar includes stevioside (STV), rebaudioside A (Reb A or R-A), rebaudioside C (R-C), dulcoside A and steviobioside. The sweetness of stevia sugar is 150-250 times of that of sucrose, the sweetness of STV is 300-350 times of that of sucrose and the sweetness of R-A is 400-480times of that of sucrose. Rebaudioside C has the bitter taste and affects the quality of products. As the level of rebaudioside C is about 5-8%, the product has obvious bitter aftertaste. It is necessary to produce STV in purity above 90% and R-A in purity above 80%.
