Grandfather Augusto Leoni starts the
family traditional production of the
“Porchetta of Ariccia” in the forties. He was among the first to
debone the pork, to add salt and
spices
and to tie it in the form that later on
will
make the Porchetta of Ariccia famous
all
over the world. Already the ancient Romans used to
appreciate this dish, but it's in the
town of
Ariccia (30 Km South from Rome) where for
the first time a production standard is
set
that will lead in 2011 to the
recognition of
product with “Protected Geographical
Indication” (Italian Reg. 567/2011). Leoni Randolfo keeps on the family
tradition producing the Ariccia PGI
Porchetta and a wide range of typical
salami and sausages of Latium
together
with his sons Augusto and Riccardo. The
firm strictly produces by hand in order
to
maintain the high quality and
genuineness
of the typical salami and cold pork
meat.
